Italian Caprese Chicken Breasts

  • 2 chicken breasts – thinly sliced
  • 3 cloves of finely minced garlic
  • Fresh ground pepper to taste
  • Kosher salt to taste
  • 22Crushed red chili flakes to taste
  •  ¼ of a cup of Fresh lemon juice
  • 3 tbsp of chopped basil or chopped oregano
  • 2 Roma Tomatoes – sliced thinly
  • 4 ounces of fresh Buffalo Mozzarella
  • 1 Large oven safe skillet

23 This particular recipe is called Caprese style chicken breasts, which is from the island of Capri in Italy. Preheat your oven to 425 degrees to ensure it’s fully heated when the chicken is ready to be put in. Heat your large oven safe skillet to medium high heat, once heated through add extra virgin olive oil then proceed to coat the bottom. Once the pan is coated nicely in oil you’re ready to add the chicken breast. These chicken breasts are sliced in halves and pounded down lightly so it should give you about four pieces to work with. Once your chicken breasts are in the pan and you’ve started searing them on both sides, you’ll want to add the garlic. This garlic first needs to be peeled and finely minced so don’t forget. The next step is to sprinkle in some of the freshly ground pepper and some kosher salt. The kosher salt option is great because it contains less sodium then regular salt. After that add some crushed red chili flakes. The chicken being so thin means it does cook faster so they are ready to flip in about five minutes. We can then add some of that fresh lemon juice which will add some delicious flavor to the chicken while giving a nice shot of vitamin C to the recipe. 24Next, add the 3 table spoons of chopped basil or chopped oregano. This will prepare for the Roma Tomatoes and mozzarella to be added. Rotating lengthways add the Buffalo Mozzarella and the Roma Tomatoes. Presentation isn’t everything although you’ll want it too look nice just make sure overall you’re working harder towards it tasting nice. Once you’re done the layering the tomatoes and mozzarella add a little more of the herbs over top. This will look great. This dish is ready for the oven as long as it’s preheated to the correct temperature which is 425 degrees as we want to flash heat it to melt it to perfection without over drying the chicken. This scrumptious recipe should be in there about 5 – 10 minutes which will cook the tomatoes and melt the cheese together. Keep an eye on it to be sure not to overcook and then before you know it you’ll be ready to remove it from the oven. A spatula will probably be the best kitchen utensil to transport the food to a plate with so the look of the dish holds together well. You can serve this atop some grilled or baked vegetables or get more creative and try it with a different side. This recipe turns your chicken into a zesty flavorful dish that will not disappoint so be more adventurous in the kitchen and try something new for dinner tonight.
